Chicken Tortilla Soup
I invented this today, and it was superb. I've had it in restaurants, and surfed a bit online to get ideas, and decided I could one-up it in the easy department.
So here it is
6 cups of chicken broth. (I made this with bullion cubes, but if you have broth that would be fine too)
1 can of chicken. (fresh chicken would be better I'm sure, but hey)
1 T vinegar. (I used balsmic, but any vinegar will work)
1 can of corn
1 cup of salsa
Bring almost to a boil, and then let set at low for at least ten minutes. The longer you let it set the better the flavors will juice together. This tasted so good, and was super duper easy. Its supposed to have broken tortilla chips in it, but we used saltines. As a extra treat we sprinkled about a teaspoon of cheddar cheeze on top, but that's not necessary. Can you tell I do a lot of tweaking when I cook. I rarely cook a recipe the way its written.
And my three day headache has temporarily abated. I'm really, hoping that means its gone, but I'm not holding my breathe. Its very hard to function with this strong of a headache.

Do so hope that the headache is gone. I get them so bad that my teeth and ears hurt. I'm just wiped out for a day or so after having one.
Oh that looks good AND easy.
Oh, I can't find the recipe of yours I tried with the saurkraut and polish sausage soup. I remember that was easy too.
have you done the Elizabeth George one I blogged about? Did you like it?
So actually it was chicken saltine soup -- ehehehe. I couldn't resist!
Do hope the headache goes away.
