CARNE ASADA
2 lb. skirt steak
Juice of 2 lemons
2 mashed garlic cloves
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. onion salt
1/2 med. onion, thinly sliced
Marinate steak, thinly sliced, with above ingredients. Place in refrigerator until ready to cook. Drain. Can be broiled or char-broiled.
Serve with beans, rice or for a treat dice radishes, 1/2 red onion, cilantro. Mix with lemon juice and salt.
For zest, dice 1/2 serrano pepper, add to tacos.
We're having this for dinner. MMMM!! The lady in the campsite next to us gave us her leftovers and it was scrumptious!! It would probably be better marinated overnight, but it will still be good.
It can also be marinated in orange juice. A combo of orange/lime or orange/lime/lemon. She did hers in orange. We had lemon, so it will work. I'm hungry now, and its hours until dinner.

This sounds delicious. I'll have to try it this week. Out of curiousity- what is skirt steak? I have never heard of it. Is it similar to round steak or a higher quality steak?
