  • Does anybody have a Cous Cous Tomato Salad recipe they'd love to share with me?  I know I'm reaching...nobody around here even eats it, but Rob and I love it.   I usually make it from a mix, but wanted to try it on my own......


    Gotta be always learning something new you know.  I found some online, but I always prefer a recipe somebody else has made.

  • Nope, don't have one. I usually use the recipe on the back of the Cous-cous box myself. LOL. What... lemon, tomatoes, parsley... salt and pepper too? That's about I think.

  • Oh wait... this'd be close to what I've done:

    Tomato, Basil and Couscous Salad

    2 1/4 cups canned chicken broth 10 ounces box couscous 1 cup green onions, chopped 1 cup plum tomatoes, diced and seeded 1/3 cup fresh basil, thinly sliced 1/2 cup extra virgin olive oil 1/4 cup balsamic vinegar 1/4 teaspoon dried red pepper, crushed Cherry tomatoes, cut in halves...

    I'd add some cilantro too, maybe cut the red pepper. *shrugs* It's not too hard to toss something together until you like what you're tasting with that stuff. LOL. :sunny:
